The pistachio nut is a drupe. The nuts are first dried in the sun - after which they can be stored for at least a year. They are also soaked in a saline solution and fried. Pistachios have high nutritional value - they contain more than 50 percent fat, as well as protein and carbohydrates. They have a tonic effect and are recommended for use for chronic fatigue. The fruits contain up to 3.5% sucrose, organic acids (acetic), 4.6% proteins, fiber, 48-76% fatty oil, consisting of 80% unsaturated acids, tocopherols, higher fatty acids, anthocyanins. They contain a lot of vitamin E, a known natural antioxidant that rejuvenates the body.
